Mother’s Day Italian Dish

With Mother’s Day around the corner, take advantage of the abundance of fresh produce in your local markets and put a healthy twist on simple, homemade dishes that anyone can prepare and any mom would love!

For the Italian-loving mom, spice up her day with Penne with Zucchini and Tomatoes and you’ll make this Mother’s Day a delicious memory. You can find this recipe along with tips for gracious and joyful celebrations in Christy Rost’s Celebrating Home!

Ingredients

¾ pound penne pasta, cooked almost al dente, drained, and set aside

½ cup red onion, peeled and chopped
1 yellow bell pepper, rinsed, seeded, and chopped
2 medium zucchini, rinsed, quartered lengthwise, and cut into ½-inch thick cubes
2 cups white mushrooms, cleaned and sliced
3 large cloves garlic, peeled and chopped
3 tablespoons fresh basil, rinsed and julienned
1 tablespoon fresh oregano, rinsed and chopped
1½ teaspoons dried Italian seasoning, generous grinding of black pepper
⅓ cup freshly grated Parmigiano-Reggiano, for sauce
½ cup freshly grated Parmigiano-Reggiano, for garnishrule-hor
Preheat the oven to 350°F. After the pasta is cooked, preheat a large skillet over medium heat, add the oil, and swirl to coat the bottom of the pan. Add onion and bell pepper, sauté 3 minutes until the onion is translucent, stir in zucchini and mushrooms, and sauté 3 minutes more. Add garlic and cook 1 minute until it is fragrant.Stir in diced tomatoes, tomato sauce, basil, oregano, Italian seasoning, and black pepper. Cook the mixture 5 minutes until the vegetables have softened and stir in the cheese. Pour the vegetable mixture over the pasta and toss gently to mix. Spray individual au gratin dishes or a 9-by 13-inch pan with nonstick cooking spray and spoon the pasta mixture into the dishes. Sprinkle with the remaining cheese, cover, and bake 40 to 50 minutes, or until the casserole is hot and bubbly.  Yields 6 servings.
